Vegan french toast means that the deliciously loveable rogue breakfast, French toast, is no longer just for egg-eaters and milk-drinkers.

A weekend favourite, French toast is a lovely soft-crunchy mix of cooked bread in a soppy sauce. It’s not easy to get it just right though – and that’s why we’re here.

Egg fries easily, and as a result it makes normal French toast easier than vegan French toast – at least to the untrained eye.

Easy like a Saturday morning

Luckily, vegan french toast can (and should) be just as simple as the regular kind. We’re going to use almond milk instead of cow milk.

And while egg does work wonders as a binder, we use a little flour instead. It helps thicken the almond milk and make everything a little more malleable.

Just like normal French toast, what we’re going for is a ‘creamy’ type of toast with a soft(ish) centre and a crispy outside.

Sweet or Savoury?

The flavour is relatively neutral – it really shines when mixed with other flavours.

That means you can use different toppings to get wildly different results.

Our favourite is a savoury french toast with avocado, tomato and basil, but a sweet version with cinnamon or vanilla is also delicious (or try veganising our delicious baked protein french toast recipe !).

Dos and Don’ts of Vegan French Toast

There are few things to make sure you do to get perfect results every time.

DO

Remember to heat the pan first. Putting dipped bread into a cold pan for cooking just leaves a sloppy mess.

Dip the bread for long enough. The bread has to soak up the mixture. You can also squidge the bread down with your fingers and it’ll suck the milk up as it rises again.

DON’T

Use bread that is too thin. We don’t want the bread falling apart as we cook it. Bread that is a day or two old is ideal as well – it’s better to go a bit hard than soft 😉

Use too much vegan margarine or oil for frying. Just enough to wipe across the bottom of the pan is fine.

  • 4 slices wholegrain bread
  • ⅖ cup almond milk (⅖ cup = 100ml)
  • ⅕ cup sparkling water (⅕ cup = 50 ml)
  • 3 tbsp buckwheat flour
  • 3 tbsp sesame seeds
  • ¼ tsp salt
  • ¼ tsp turmeric
  • 2 tbsp oil (or vegan margarine)

Toppings

  • 8 cherry tomatoes
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  • Cut the bread into triangles. 4 slices wholegrain bread
  • Blend the milk, water, flour , half the sesame seeds , the salt , and turmeric together well. ⅖ cup almond milk, ⅕ cup sparkling water, 3 tbsp buckwheat flour, 3 tbsp sesame seeds, ½ tsp salt, ¼ tsp turmeric
  • Soak the bread in the milk mix in a wide bowl for about 30 seconds, pressing the bread down so it soaks up the mixture.
  • Meanwhile, heat up a pan on medium heat and add the oil/margarine . 2 tbsp oil
  • Cook the bread until golden brown on both sides, roughly 3 minutes each side. If it needs longer, give it some extra so it’s nice and crispy.
