Ingredients

  • 2 slices wholegrain bread
  • 9 oz mushrooms (white or brown)
  • 1 small onion
  • 1 clove garlic
  • 2 tsp olive oil
  • 3.5 oz low fat cream cheese
  • 2 tbsp soy sauce
  • 1 tbsp parsley, fresh (1 tbsp fresh = 1 tsp dried)
  • Salt and pepper to taste
  • 2 tbsp Worcestershire sauce (vegetarian) (great if you have it!)
  • 1 small handful walnuts

Optional

  • 1 tbsp chives, fresh

Instructions

  • Give the mushrooms a quick wash. Slice length-ways and add to a pan with olive oil on medium heat, frying for about five-six minutes. Add a dash of water as well. 9 oz mushrooms, 2 tsp olive oil
  • Chop the onion and garlic and add to the pan. Fry for another five minutes or so, until soft. 1 small onion, 1 clove garlic
  • Add the cream cheese , salt and pepper , parsley , soy and Worcestershire sauce. 3.5 oz low fat cream cheese, 2 tbsp soy sauce, 1 tbsp parsley, fresh, Salt and pepper to taste, 2 tbsp Worcestershire sauce (vegetarian)
  • Bring to the boil, then reduce heat and simmer for another five minutes. If the texture is too thick add a little bit of water .
