If you’re like me, sometimes making lunch involves a lot of standing in front of the fridge trying to decide what you want to eat. It can be tough to come up with something new every day. Thankfully, I’ve developed a strategy for when I’m lacking inspiration.
The strategy is: make avocado toast but add something new!
Sometimes it’s an egg, or fried tomatoes , or hummus, but this recipe is for Radish and Cilantro.
Radish and Cilantro – Yum!
It’s a study in contrasts. The crispiness of the radish cuts the softness of avocado. The cilantro brings an edge to it’s smoothness. Better yet, it takes 5 minutes and hardly any effort to prepare!

No matter what option you choose, you can’t go wrong with avocado toast!

Ingredients
- 1 slice wholegrain bread (ideally whole grain)
- ½ medium avocado
- 2 radishes
- 1 tbsp cilantro/coriander, fresh
- 1 tsp lemon juice
- Salt to taste
Instructions
- Mash the avocado , add some salt and a dash of lemon juice .
- Thinly slice the radish .
- Garnish with cilantro .
- Tangy and tasty!
